Most people if not all love cakes. Here are some vegan birthday cake recipes that you should try.
1. The Easy Vegan Chocolate Cake
Ingredients
- A dairy-free sunflower spread
- 1large avocado
- 300g light muscovado sugar
- 350g gluten free powder
- 50g cocoa powder
- A tbsp bicarbonate soda
- 2 tbsp baking powder
- 400ml unsweetened soya milk
- 150ml vegetable oil
- 2 tbsp vanilla extract
Frosting
- 85g of mashed avocado
- 85g of dairy-free sunflower spread
- 200g of dairy-free chocolate
- 25g cocoa powder
- 125ml unsweetened soya milk
- 200g of sifted icing sugar
- 1 tbsp of vanilla extract
Method
- Heat the oven to 160°
- Grease tins with the sunflower spread
- Blend the avocado and muscovado sugar till smooth
- Whisk rest of cake ingredients in bowl
- Divide the liquid batter into tins and bake for 25 minutes
- For the frost, beat the ripe avocado and sunflower spread with electric beaters
- Melt the chocolate
- Sift the cocoa powder in a large bowl
- Add the sifted icing, melted chocolate and vanilla to the avocado extract
- Top the cake the frost
2. Vegan Carrot Cake
Ingredients
Icing
- 4, 200g sachets creamed coconut
- 1 tbsp lemon juice
- 2 tbsp cashew nut butter
- 50g icing sugar
- 60ml oat milk
Cake
- 250ml melted coconut oil
- 300g light brown sugar
- 5 tsp vanilla essence
- 210ml dairy free milk
- 420g plain flour
- 5 tsp baking powder
- 5 tsp bicarbonate soda
- 1 tsp cinnamon
- 1 tsp ginger
- 1 tsp ground nutmeg
- 1 orange
- 4 grated carrots
- 75g chopped walnuts
Method
- Whisk the icing ingredients together
- Whisk the cake ingredients together
- Divide the mixture between the prepared tins and bake for 30 minutes
- Sandwich the cakes together and one top with the icing and scatter the nuts
3. Vegan Lemon Cake
Ingredients
- 100ml vegetable oil
- 275g self-rising flour
- 200g golden caster sugar
- 1 tsp baking powder
- 1/2 juiced lemon, 1/2zested
Icing
- 150g icing sugar
- 1/2 juiced lemon
Method
- Heat the oven to 200°
- Mix all cake ingredients in a bowl
- Place the mixture in a tin and bake for 30 minutes
- Mix the icing sugar and lemon and pour over the loaf
4. Vegan Sponge Cake
Ingredients
- 150g dairy-free spread
- 300ml dairy-free milk
- 1 tbsp cider vinegar
- 1 vanilla pod
- 300g self-rising flour
- 200g golden caster sugar
- 1 tsp bicarbonate soda
Filling
- 100g dairy-free spread
- 200g icing sugar
- 4 tbsp jam
Method
- Heat oven to 180°
- Put dairy-free milk and vinegar in a jar. Mix the cake ingredients and pour over the milk mixture. Beat everything together.
- Divide the mix into 2tins and bake for 35minutes
- Whisk the filling ingredients
- Spread the filling on the now cooled sponges
5. Vegan vanilla cake
Ingredients
Cake
- 5 cups non-dairy milk
- 2 tsp apple cider vinegar
- 230g granulated sugar
- 110ml vegetable oil
- 1 tbsp pure vanilla extract
- 2 cups all-purpose flour
- 3 tbsp cornstarch
- 3/4 tsp baking soda
- 1 tsp baking powder
- 3/4 tsp salt
Frosting
- 3/4 cup non-hydrogenated margarine
- 3/4 non-hydrogenate shortening
- 5 cups powdered sugar
- 1 tbsp pure vanilla extract
- 1/4 cup non-dairy milk
Method
- Preheat oven at 350°
- Whisk the non-dairy milk and vinegar then add sugar, oil and vanilla extract
- Sift flour, cornstarch, baking soda, and salt
- Add dry ingredients to the wet and whisk
- Bake for 25minutes
- Mix the frosting ingredients together
- Pour the frosting on top of the cake
