Stir fry

  • 12 ounces tofu
  • 1 tbsp sesame oil
  • 1 cauliflower head

  • ¼ cup soy sauce
  • ¼ light brown sugar
  • ½ tsp chili garlic sauce

Method

✓ Drain the tofu 1.5 hours before and roll it in an absorbent towel
✓ Preheat oven to 400° and cube tofu. Place the tofu in baking sheet and bake for 25minutes
✓ Whisk all the sauce ingredients together then add the cooled tofu to the sauce
✓ Shred the cauliflower into rice

Ingredients

Simmering broth

  • 8 cups vegetable broth
  • 6 minced garlic cloves
  • ¼ sliced ginger

Seitan

  • 1 ¼ cups wheat gluten
  • 3 tbsp yeast flakes
  • ¾ cup cold water
  • ¼ soy sauce

Marinade

  • 1/3 cup hoisin sauce
  • ¼ cup mirin
  • 3 tbsp water
  • 2 tsp Sriracha
  • 1 tsp minced ginger
  • 1 tsp sesame oil
  • 2 bunches sliced scallions

 

Method

✓ Bring all the ingredients for the simmering broth to a boil in a pot
✓ Combine the seitan ingredients and knead them to form a dough
✓ Form dough into flat log and let it simmer in broth for 30 minutes
✓ Mix the marinade ingredients together
✓ Slice the seitan into 16 pieces and place them in the marinade for 1hr
✓ Add the scallions to the sauce
✓ On a dinner plate, roll the seitan around the scallion and secure with toothpick
✓ Cook the rolls on a grill
✓ Transfer to serving plate

3. Zucchini noodles with avocado sauce

Ingredients

  • 1 zucchini1
  • ¼ cup basil
  • 1/3 cup water
  • 4 tbsp pine nuts
  • 2 tbsp lemon juice
  • 1 avocado
  • 12 sliced cherry tomatoes

 

Method

✓ Use a peeler or the Spiralizer to make zucchini noodles
✓ Blend all ingredients except cherry tomatoes
✓ Combine noodles, avocado sauce and tomatoes in mixing bowl

  • 3.5 cups flaked coconut
  • 2 tbsp liquid smoke

Method

✓ Preheat oven to 325°
✓ Combine all ingredients except coconut in mixing bowl
✓ Toss the coconut in the bowl and then pour it onto baking sheet
✓ Bake in oven for 25minutes

Ingredients

  • 1/2 red onion
  • 1/2 red bell pepper
  • 3 sliced mushrooms

  • 400 ml coconut milk
  • 1 tbsp coconut or brown sugar
  • 275g cubed tofu
